Die Planung und Komposition von Menüs mache ich am liebsten im Kopf. Aber es hilft, sich das vorher zu visualisieren. Diese Variante war eigentlich die naheliegendste: Mit Papier und Buntstift! Ging fix und ich hab alles in der Übersicht, um es vorzubereiten. Aber auch nicht so einfach: Mit welchen Farben male ich denn Palatschinken? Und Sahne? Ich bin ja nicht gerade ein trainierter Zeichner so wie die Urban Sketchers. Vielleicht sollte ich mir wie Claudio del Principe einfach einen talentierten Zeichner einladen? Schaut Euch mal das Resultat an, wow! Muß das sein? Ach was, meine geringfügigen Zeichenfähigkeiten reichen zur Planung!
Heute wird das gekocht nach dem Entwurf in der Mittagspause. Probleme bereitet mir in der Komposition noch der Nachtisch, da bin ich mir einfach nicht sicher, ob dass mit dem Pflaumenmousse so klappt, wie ich mir das vorstelle. Und natürlich die konfierten Wachteln – sind auch Premiere für mich. Oder vielleicht klappt das mit dem Bierteig nicht? Mal schauen, der Plan steht, jetzt kommt die Umsetzung!
